These exquisite wines bear the unmistakable imprint of Dean Shaw, the mastermind behind The Central Otago Wine Company (COWCo) located in the charming town of Cromwell. Dean, a remarkable personality, possesses not only an extraordinary flair but also a delightfully subtle sense of humor, making his presence a truly memorable experience. Yet, it is his unwavering devotion to the art of crafting Pinot Noir that truly sets him apart.
Dean's journey into the world of wine commenced with the pursuit of knowledge, culminating in a postgraduate degree in Viticulture and Wine Science from Lincoln University in Canterbury. In 1994 and 1995, he made his initial foray into Central Otago at Rippon Vineyard, collaborating alongside Clotilde Chauvet. Following this, he honed his skills for two years at Giesen Wine Estate in Canterbury, under the mentorship of Rudi Bauer. Notably, his talents also graced Blackridge Estate in Alexandra before fatefully establishing roots in Cromwell, where he emerged as a partner in COWCo. This visionary endeavor provides local producers with access to top-tier winemaking facilities under Dean's expert guidance.
Dean's quest for mastery extends well beyond the borders of New Zealand. An inherent trait among the country's winemakers, he dedicates a significant portion of each winter to immersing himself in the winemaking enclaves of Champagne, Burgundy, Alsace, and South Africa. These globetrotting sojourns have enriched his New Zealand-based education, nurturing a profound ardor for Pinot Noir, particularly the distinctive expressions found within the Central Otago region.
Embracing a philosophy rooted in authenticity, Dean approaches winemaking as an art of minimal intervention. He champions the use of wild yeasts and even serenades the maturing wine with a stereo system so impressive that it would make most nightclubs envious. This approach acts as a conduit, allowing the wine to harmoniously echo the nuances of the vineyard that cradled its inception. It's an approach that not only imparts individuality and excellence to each creation but also instills a palpable sense of rhythm within the very essence of the wine itself.
